Ingredients for pasta with broccoli and prawns.

  • 200 g fusilli pasta
  • 200 g broccoli florets
  • 2 tablespoons of olive oil
  • 200 g frozen, blanched prawns
  • 3 small cloves of garlic
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of freshly ground black pepper
  • 1 tablespoon of lemon juice
  • 1/2 teaspoon of grated lemon zest
  • 100 g mascarpone cheese
  • 1 teaspoon of herbs de Provence
  • 250 ml vegetables broth or bouillon cube

To serve:

  • parmesan cheese

Additionally:

  • water for boiling the pasta
  • 1/2 teaspoon of salt to season the water

How to make pasta with broccoli and prawns.

Cut the broccoli florets into slices and place them in a bowl. Press the peeled garlic through a garlic press or chop it finely.

Pour olive oil into a pot, add the mashed garlic and fry over a low heat for a few seconds. Then add the chopped broccoli florets and fry over a medium heat for 2 minutes, stirring occasionally. Afterwards, pour in the vegetable broth, lemon juice and grated lemon zest, add Proven├žal herbs, mascarpone cheese, black pepper and salt, and cook over a medium heat for a minute. Next, add the prawns and continue cooking for 2 minutes, stirring occasionally.

At the latest, when the sauce is almost ready, you should start cooking the pasta. Pour about 2 litres of water into a medium-sized pot, add salt and bring it to a boil. Pour the pasta into the boiling water, bring it to a boil again, and then cook it over a low heat for 8 minutes. Place the boiled pasta in a pot with broccoli and prawns in the sauce, mix and sprinkle with grated parmesan cheese.

Good to know when making pasta with broccoli and prawns.

I use frozen prawns that are already cleaned, blanched and ready to use once thawed. I defrost the prawns in cold water, pour off the water, slightly squeeze out the excess water from the prawns and add them to the sauce.

When making the sauce, you can use broth made with vegetables or a bouillon cube. In this recipe I use a bouillon cube.

I use medium-sized, tri-coloured fusilli pasta. I cook the pasta for 8 minutes. I recommend cooking the pasta and using it according to the instructions on its packaging. It is best to start cooking the pasta at the same time as you start frying the broccoli.
