Whenever I visit my parents in Poland, me and my sister always buy a certain type of baked roll, with cheese and other additions, called zapiekanka. It has already become our little tradition 🙂 Let me share its secret with you.

Ciabatta baked with mushrooms and cheese

On the square of my hometown there is a small booth. It is not some sophisticated place but they sell the best zapiekankas.

Our favorite is a big one with quite a few extras 🙂

From time to time, I would make a casserole at home, especially when I wish to recall the tastes of Poland.

In my opinion, all kinds of rolls are adequate as the basis for the zapiekanka. Recently, however, I found out that it tasted the best, when it’s made on the ciabatta roll. It was very crispy.

  • Ingredients:

    • 500 gr of mushrooms
    • 2 ciabatta rolls
    • 100 gr cheddar cheese
    • 2 tablespoons of olive oil
    • 4 tablespoons of canned sweetcorn
    • 3 halves of marinated bell pepper
    • 1 tablespoons of chopped parsley
    • 1/3 of teaspoon of salt
    • ketchup for serving

  • Warm up the olive oil in a frying pan, then add the grated mushrooms. Fry on a medium heat for 5 minutes. Cut each of the rolls across and put the fried mushrooms and the cheese on them. Bake for 20 minutes at 180 degrees Celsius. Serve with ketchup, sprinkle them with sweet corn, bell pepper slices and parsley.

  • After frying, drain the juice from the mushrooms, otherwise the rolls will soaked.
