WZ cake is one of those cakes that I really like to bake.
A simple cocoa cake with a layer of delicious whipped cream. What more do you need for happiness?
The basis of this dough is a sponge cake. The uniqueness of this WZ-tce is added vanilla liqueur, which is soaked in the dough.
I prepared this cake for a birthday instead of a cake. It was perfect.

Sift flour into a bowl and mix it with baking powder and cocoa. Whisk egg yolks with sugar and vanilla. Whisk the egg whites with a pinch of salt in a separate bowl until the mixture stands up in stiff peaks. Add the flour to the yolks while mixing gently with the mixer. Finally, slowly add the egg whites to the egg yolks gently mixing with a wooden spoon. Transfer the cake mixture into a baking tray. Bake for 3o min on 180 degrees Celsius. Cool the cake. Once it is cooled down, cut it across horizontally. Soak each side of the cake with vanilla liqueur.
Whip cream with sugar in a bowl until half stiff. Add mascarpone and continue whisking. Dissolve the gelatine in a cup with three tablespoons of water. Let it cool, but it should still be runny. Add the cold gelatine to the whipped cream and mascarpone cheese mixture, and combine them thoroughly.
Mix margarine, sugar, water and cocoa in a pot. Boil on low heat. From the moment it starts boiling, cook it for one and a half minutes, stirring constantly. Let it cool down.
Cover the cake with the cream mixture. Glaze the top of the cake with chocolate. Cool it in the fridge.
I used a square baking mold of 19 x 19 centimeters.
The cake mixture might seem dense before adding the flour, but it should be so.
