I made this orange cake without baking for Saturday’s coffee.
I do cakes without baking when I need something sweet quickly. Like when guests are coming and then the whole day is followed by sweets anyway 🙂
By making a cake without baking I save time by not having to bake and then cool it down.
The cake from the recipe below has a citrus flavour, and a cocoa base. Those two complement each other very well.

Crumble the biscuits in a mixer or by putting them in a foil bag and crumbling them with a pestle.
Melt the butter, add the crumbled biscuits and mix thoroughly. If, after adding butter, the mixture is still a bit dry, add more butter to it. Cover the bottom of the cake mold with aluminum foil or baking paper. Place the crumbled biscuits with the butter into the bottom of the tin. Spread out evenly and press with your fingers.
Bring some freshly squeezed orange juice to boil then remove from the heat and dissolve the orange jelly in it. Mix thoroughly and let it cool.
Whip cream with caster sugar until it thickens slightly. Then add the mascarpone cheese and whip for a few seconds until it thickens some more. Finally, add the cool thickening jelly but very slowly.
Pour the finished mixture onto the cocoa base and spread it evenly. Cool in the fridge for at least an hour.
Dissolve milk chocolate. Once it’s liquid but no longer hot, drizzle the top of the cake with it.
I used a round baking mold with a diameter of 20 centimeters.
I decorated the top of my cake with pieces of fresh orange, over which I poured some melted chocolate.
After adding the jelly, the mixture should be mixed very quickly. Otherwise it will start solidifying and it will have lumps.
Depending on the biscuits you use, you may need a small increase in the amount of butter you add to it.
