My suggestion for a simple and tasty breakfast is toast with avocado, bacon.

As they say, breakfast is the most important meal of the day. It should be nutritious, healthy and at the same time tasty.

It is not easy meeting all these requirements because, as you surely know, a delicious breakfast is usually equal to an unhealthy one.

But not this time 🙂

Toast can be served in various forms. People eat it often simply with jam, butter, or as an addition to dips, scrambled eggs and other dishes.

This time I assembled a sandwich using toasts.

Ingredients you need for making avocado toasts.

  • 8 slices of toast bread
  • 1 ripe avocado
  • 4 slices of raw bacon
  • a few leaves of fresh spinach
  • 4 eggs
  • 2 tablespoons of mayonnaise

How to prepare avocado and egg toasts.

Place the bread into the toaster or gently fry them in a pan.

Fry the bacon. It’s best to do it over medium heat so that the bacon melts and becomes crunchy.

Place the eggs in a frying pan. I made my fried eggs on a non-stick pan, so I did not add fat to frying them. Fry them over medium heat – you can add a pinch of salt and pepper. Fry them until the egg whites are set turn them over and fry for about an additional 30 seconds. I like it most when the yolk is still runny – that way you can have some additional sauce.

Assembling the toast sandwich: spread some mayonnaise gently on each toast. Put sliced avocado slices on one toast, a piece of bacon, the eggs and a few spinach leaves. Cover with the other toast with the side with the mayo facing down.

What you need to know when making avocado toasts.

I used toasted bread, but you can use a different type of bread, even without gluten.

Do not burn your toasts. They should be crispy but not rock-hard.

I used very thin but long slices of sliced bacon.
