Ingredients for spinach crêpes.

  • 80 g fresh spinach leaves
  • 100 ml cold water
  • 300 ml milk
  • 2 eggs “L”
  • 200 g all-purpose flour
  • 1 tablespoon of oil
  • 1/2 teaspoon of salt

How to make spinach crêpes.

Put fresh spinach leaves in a tall container, pour in water and blend. Add the eggs, salt, oil and milk, and mix together for a few seconds. Pour the mixed ingredients into a bowl, add the sifted flour and, using a whisk or a hand mixer, whisk the ingredients for about a minute, or until there are no lumps in the batter. Set the prepared crêpes batter aside for 15 minutes.

Place a pancakes pan or a non-sticky pan on the heat and warm it up. When the pan is well hot, reduce the heat to medium and pour the crêpes batter thinly into the pan. Fry the crêpes for about 2-3 minutes on both sides. Place the fried crêpes on a plate.

The pan on which I fried the crêpes had a diameter of 24 centimetres. I did not grease the pan with additional grease, because the crêpes batter has oil in it. If you are using a pan that does not have a non-sticky coating, you will need a small amount of oil for frying.
