Racuchy is a dish that I remember from my childhood. The best ones were made by my aunt. The batter from which these were made was sweetish, but the apples she used had a slightly tangy taste. Therefore, they perfectly matched the sweetness of the cakes and the additional caster sugar, which my aunt always used to sprinkle the cakes.

I also remember that the cakes she made were made with an addition of baking powder. It was different from how my mum used to make these cakes. She always used a yeast based batter.

I personally mostly use baking powder, but sometimes it happens that I go for yeast. So the choice is yours 🙂

One thing is for sure, select nice apples. Don’t choose apples that are hard or tasteless. Soft and slightly acidic apples are best for these cakes.

Ingredients for racuchy.

  • 250 g plain flour
  • 1 teaspoon of baking powder
  • 250 ml milk
  • a pinch of salt
  • 1 teaspoon of crystal sugar
  • 1 egg
  • 2 medium sized apple
  • 1 teaspoon of cinnamon
  • 2 tablespoons of caster sugar
  • sunflower oil for frying

How to make racuchy with apples.

Peel the apples and cut them into cubes or very thin slices.

Crack an egg into a bowl. Add milk, salt, granulated sugar, flour and baking powder. Whisk until batter has a homogeneous consistency, without lumps. Finally, add the sliced or thinly grated apples. Mix.

Pour the oil into a frying pan. Warm it up and when hot, spoon out the cake batter and place it on the oil. Depending on how big you want your cakes to be, use as much batter as needed. Two full tablespoons are enough to create medium-sized cakes.

Fry the cakes over a medium heat, until golden brown on both sides.

Dust the fried cakes with caster sugar and cinnamon. Serve warm.

The oil in the pan should not be more than one centimetre high. The cakes should not float, but only be half covered.

Go for soft apples as they will fry faster and will not make the batter have a crunchy feeling, unlike hard ones would.
