Egg and mushroom salad
Easter is a perfect time to prepare dishes based on eggs. There are plenty of such dishes, because we are talking here not only about savoury dishes but also about desserts. You can choose from a whole lot of delicious cakes and muffins, mazurkas, cheesecakes, all kinds of no-bake cakes, salads, soups, devilled eggs and the list goes on. One thing is certain, during Easter I use much more eggs for various baked goods and dishes than during Christmas. However, this is not a surprise to me, because it has long been known that the egg is an indispensable element of Easter.
Salad with egg, marinated mushrooms, herbal croutons and parmesan cheese is perfect for Easter, but not only. It is quick to prepare, because apart from the eggs, you do not need to cook or bake the remaining ingredients. The salad is seasoned to taste with yoghurt, dill and lemon juice dressing. Ingredients for egg and mushroom salad.
- 4 hard-boiled eggs
- 1 head of little gem lettuce
- 100 g marinated mushrooms
- 3 tablespoons of grated parmesan cheese
- 50 g herb croutons
Yoghurt dressing:
- 120 g natural yoghurt
- 1 tablespoon of chopped dill
- 2 tablespoons of mayonnaise
- a pinch of salt
- a pinch of black pepper
- 1 tablespoon of lemon juice

How to make egg and mushroom salad.
Put ground pepper, salt, lemon juice, chopped dill, yoghurt and mayonnaise in a bowl. Mix it. Place lettuce leaves on a serving plate, then place eggs cut in half, marinated mushrooms and croutons on them. Pour the yoghurt dressing and sprinkle it with grated parmesan cheese.

Good to know when making egg and mushroom salad.
You can use any marinated mushrooms in this recipe. These can be pickled wild mushrooms such as boletus mushrooms, bay boletes or butter mushrooms, or you can also use pickled champignons.
