Pasta with zucchini and ham is a dinner dish that you can prepare in less than 30 minutes. It is a perfect dish for those who are in a hurry and who do not like to spend too much time cooking. The basis of this dish is pappardelle pasta combined with a creamy zucchini and ham sauce. Pappardelle is a pasta shaped like long and wide stripes. This pasta is perfect for dishes that require sauce. It tastes delicious when served, for example, with mushroom, cheese or tomato sauce and with seafood. The sauce with which I combined pappardelle is a slightly spicy sauce made from fresh zucchini, ham and mascarpone. I seasoned the sauce with a bit of garlic and Provençal herbs. I serve this dish for both dinner and lunch, sometimes sprinkled with grated Parmesan cheese. The addition of cheese is not a necessity, but if you like it, you can of course serve the pasta with it. Ingredients for zucchini and ham pasta.
- 500 g zucchini
- 150 g sliced ham
- 4 tablespoons of mascarpone cheese
- 300 ml vegetable broth
- 1 tablespoon of flour
- 2 tablespoons of olive oil
- 2 big cloves of garlic
- 1/2 teaspoon of chili flakes
- 1/2 teaspoon of herbs de Provence
- 300 g pappardelle pasta
- 2 teaspoon of salt
- 1/2 teaspoon of pepper
How to make zucchini and ham pasta.
Boil the pappardelle in plenty of water until soft, salted with 1 teaspoon of salt. The cooking time of the pasta depends on whether you want it to be soft or al dente. It is best to cook it according to the instructions on its package. Pour the cooked pasta into a colander, pour cold water over it and set aside to drain.
Wash the zucchini, dry it and cut it into medium-sized cubes. Put the chopped zucchini and olive oil in a frying pan and fry over a medium-high heat for about 8 minutes. Next, add chili flakes, mashed garlic and continue frying for a few seconds. Afterwards, add chopped ham, 1 teaspoon of salt, pepper and Provençal herbs. Fry for 3 minutes, then add the flour and, stirring constantly, fry for 1-2 minutes. Pour the vegetable broth into the fried ingredients, add the mascarpone cheese, bring to a boil and simmer, covered, for 5 minutes. The cooking ingredients should be stirred from time to time.
Mix the hot pasta with the sauce from the pan. Serve immediately after preparation.

Good to know when making zucchini and ham pasta.
I cooked the pasta for 10 minutes, after which it was soft. To make it al dente, the pasta should be cooked for 8-10 minutes
Both cooked and smoked ham can be used in this dish. I usually choose smoked ham.
Young pieces of zucchini can be cut together with the seeds, because the seeds of these zucchinis are usually small and soft. Be sure to remove the seeds from larger pieces.
