Steak and kidney pie is a very popular and traditional English dish. This dish is a combination of fried pieces of beef and kidneys with onion and spices such as Worcestershire sauce, pepper and salt. The stewed meat is baked under a layer of puff pastry and served with boiled or grilled vegetables and potatoes. Ingredients for steak and kidney pie.
- 400 g beef kidneys
- 800 g leg of beef
- 200 g onion
- 4 tablespoons of flour
- 2 and 1/2 teaspoons of salt
- 1/2 teaspoon of black pepper
- 2 bay leaves
- 500 ml water or beef stock
- 1 teaspoon of Worcestershire sauce
- a packet of puff pastry (270 g)
- 1 egg
- 100 ml of oil
How to make steak and kidney pie.
Clean the beef leg, remove the membranes and cut the meat into medium-sized cubes. After that, sprinkle each piece of beef with flour. Pour some of the oil into a frying pan, heat it up and when hot, put on the beef pieces. Fry over a medium heat for 3 minutes on both sides. Place the fried meat in a bowl.
Remove the membrane from the kidneys, then cut the kidneys in half lengthwise. Cut the fat from each of the kidney halves and cut the kidneys into medium-sized pieces. Put the cut kidneys into a bowl, pour cold water, rinse thoroughly, then change the water, add 1 teaspoon of salt and let it soak for 3 hours. Following that, pour off the water, rinse the kidneys in clean water and put them in a colander to let them drain. Sprinkle each piece of kidney in flour and fry them in the same way as the beef.
Dice the onion, put it in the frying pan on which the meat was fried, add the remaining oil and fry for a few minutes, until the onion turns slightly golden.
Put the fried beef and kidneys, fried onion, Worcestershire sauce, water and bay leaf into the large cooking dish. Bring the ingredients to a boil, then stew under the slightly opened lid over a low heat until the meat is tender. At the end of stewing, add 1 and 1/2 teaspoons of salt and pepper. Allow the soft meat to cool down and when it is cold, remove the bay leaf, and put the meat and sauce into an ovenproof dish. Cut a round shape from the puff pastry. It should have the same diameter as the baking tin. Brush the top edge of the baking tin with beaten egg, place the puff pastry on, puncture it with a toothpick in several places and brush it with the egg. Put the tin in an oven preheated to 200 degrees Celsius for an hour. Serve the baked steak and kidney pie with potatoes and boiled beans.

Good to know when making steak and kidney pie.
The meat should be fried in a small amount of oil. You should not add all the oil at once, but only top up the oil before each new batch of meat is put into the pan.
It took me 2 hours and 30 minutes to stew the meat.
I used a heat-resistant baking dish with a diameter of 26 centimetres.
From some of the puff pastry, I cut a fancy decoration which I placed on top of the pastry in the baking dish.
