Next, the meat should be fried until golden, preferably in ghee or clarified butter, but it can also be done in olive oil. After frying the meat, you can start frying the garlic and mushrooms, also in butter, and then simmer them with water and mascarpone. Add the fried meat to the mushroom sauce and cook over a low heat for a few minutes until the sauce thickens and the meat becomes soft.

Ingredients for chicken in mushroom sauce.

  • 600 g chicken breast
  • 1 tablespoon of all-purpose flour
  • 150 g mascarpone cheese
  • 300 ml water
  • 1/2 vegetable bouillon cube
  • 2 tablespoons of ghee or clarified butter
  • 4 big cloves of garlic
  • 3/4 teaspoon of salt (flat)
  • 1/2 teaspoon of freshly ground black pepper
  • 250 g mushrooms
  • 1 teaspoon of dry oregano
  • fresh parsley to serve

How to make chicken in mushroom sauce.

Cut the chicken breasts in half lengthwise, sprinkle each side with oregano, pepper, 1/2 teaspoon of salt and flour. Put a tablespoon of butter in a pan, heat it up and when it is liquid and hot, place the chicken breasts on it. Fry the chicken over a medium heat until golden on both sides – about 8 minutes. Remove the fried meat to a plate.

Put the remaining butter into the pan, add the sliced garlic and fry for a few seconds. Next, add the sliced mushrooms and continue frying over a medium heat for about 5 minutes. After that, add 1/4 teaspoon of salt, add the bouillon cube, water and mascarpone. Cook for 2-3 minutes, then add the fried chicken and simmer for 10 minutes. Halfway through cooking, turn the meat over, and at the end of cooking sprinkle the whole thing with freshly chopped parsley.
