Chicken fajitas is a Mexican dish in which poultry and fajitas spice play the main role. The fajitas spice is nothing more than a combination of several spices typical of Mexican cuisine, such as cumin, chili, paprika, garlic, onion and cayenne pepper. So spices that you can actually get in almost every grocery store. Probably most of you have them available at home as well. However, there are two options: you can easily prepare homemade fajitas spice yourself, or you can buy a ready-made mixture. I chose the latter option this time mainly because I had already bought a ready-made spice and wanted to use it.
The ingredients needed for this dish, apart from the spices, are of course chicken meat and vegetables. In my opinion, the meat from the leg of chicken will be best, because it is the tastiest and very juicy. When it comes to vegetables, the two most common vegetables in this dish are bell peppers and onion, and these are the vegetables I decided to use. The meat itself can be prepared in two ways. The first way is to marinate the meat in oil and spices, and then fry it in a pan. The second way is to bake the whole thing in the oven. I went for the latter option: I baked the meat in the oven with the addition of vegetables and spices. After baking, it was juicy and full of flavour.
How to serve chicken fajitas? If you decide to serve it for dinner, rice as a side dish will be perfect. When served for lunch, it tastes delicious with tortillas, sour cream, salsa, lettuce, avocado, grated cheese or jalapenos. I encourage you to try the chicken fajitas recipe below and enjoy it.
Ingredients for chicken fajitas.
- 500 g chicken drumsticks
- 300 g bell peppers
- 200 g onion
- 3 tablespoons of oil
- 1/2 teaspoon of salt
- 3 tablespoons of fajitas spice mix
- 1/4 teaspoon of black pepper
Hot to make chicken fajitas.
Cut the chicken meat into small pieces, cut the onion into feathers or strips, and cut the pepper into larger pieces. Put the cut vegetables into an ovenproof dish, add fajitas seasoning, salt, pepper and oil and mix thoroughly. Cover the heat-resistant dish with a lid or aluminium foil, then put the whole thing in the oven preheated to 200 degrees Celsius. Bake covered for the first 30 minutes and uncovered for the remaining 30 minutes. Stir the roasting meat with vegetables at least once during cooking. Serve the baked chicken fajitas with rice or tortillas, drizzled with lime juice.
