Moist, vegetable muffins with cheese and zucchini are an idea for a quick and tasty snack that can be easily served for lunch, breakfast, dinner and almost for any party. Making savoury muffins takes about 10 minutes plus baking time, of course, a total of just over 30 minutes. To prepare these tasty muffins, you need hard cheese, red onion, zucchini with the skin on but seedless – if you only have older zucchini that contains seeds, then these seeds should be removed before grating the vegetable.

After cutting and grating the ingredients, make a batter from eggs, yoghurt and flour – the batter should have a smooth, uniform consistency. Add spices, vegetables and cheese into the batter, mix and when ready, fill the muffin cups with it. Bake until golden brown and serve after cooling down or when still slightly warm. Ingredients for cheese and zucchini muffins.

  • 100 g grated zucchini unpeeled
  • 50 g red onion
  • 100 g hard cheese
  • 2 medium eggs
  • 150 g all-pupose flour
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1 teaspoon of Italian herbs
  • 220 g natural yoghurt
  • 1/2 teaspoon of baking soda
  • 1 teaspoon of baking powder

How to make cheese and zucchini muffins.

Place eggs in a bowl, pour in natural yoghurt and beat with a mixer for about 30 seconds. Then, add sifted baking soda, baking powder as well as the flour and beat for a few seconds until the batter is uniform and free from lumps. After that, add Italian herbs, pepper, salt, grated zucchini, finely cut onion and grated cheese. Mix for a while with a spoon, so that the ingredients are thoroughly combined. Line a metal muffin tray with silicone or paper cups and use an ice cream scoop to fill each cup with the muffin mixture. Place the muffin tray in an oven preheated to 180 degrees Celsius and bake for 25 minutes.

The given amounts of ingredients will yield 12 muffins. I bake muffins in silicone cups.

All the ingredients used to prepare the muffins should be at room temperature.

The zucchini should be grated on a large grater and then squeezed out to remove the juice. The weight of the zucchini given in the list of ingredients is its weight after the juice has been squeezed out.

You can use any type of hard cheese in this recipe: gouda, mozzarella, gruyere will all work well.
