Strawberry tiramisu
This strawberry tiramisu differs slightly from traditional tiramisu, because it does not contain coffee. Although strawberry tiramisu can also be made with the addition of coffee, in this case I decided not to use it. The basis of this quick dessert are spongy ladyfingers biscuits, mascarpone cream and whipping cream, as well as fresh strawberries. I used fresh strawberries in two ways: the sliced pieces to layer the dessert and the blended strawberries to soak the biscuits. I made this simple no-bake dessert without any alcohol, so you can safely serve it to children as well. I broke the sweetness of strawberries and cream with a bit of lemon juice, which I added to the soaking.
It is recommended to make this tiramisu with strawberries a little bit before serving, letting it stay in the fridge for at least 3-4 hours will let the biscuits soften thanks to the soaking and the cream. I usually make this simple tiramisu with fruits during the weekend, although it can also be prepared for any celebration or without any occasion. Ingredients for strawberry tiramisu.
Soaking:
- 200 g strawberries
- 1 tablespoon of lemon juice
- 125 ml water
- 20 g crystal sugar
Additionally:
- 30 ladyfingers biscuits
- 350 g strawberries
- 350 g mascarpone cheese
- 300 ml whipping cream (36%)
- 1 teaspoon of vanilla extract
- 3 tablespoons of powdered sugar

How to make strawberry tiramisu.
Cut the strawberries into cubes, put them in a pot with sugar and water, bring it to a boil, then reduce the heat to low and simmer for 15 minutes. Afterwards, remove the pot from the heat, add lemon juice and mix the strawberries, and when ready, let them cool down.
Pour the whipping cream and powdered sugar into a bowl, then whisk until almost stiff. At that point, add the vanilla and mascarpone and continue whisking for a few seconds or until the mixture thickens.
Soak the biscuits in the blended strawberries and place them next to one another in a baking dish or in any cake dish. Put half of the mascarpone cream on the first layer of biscuits, arrange the strawberry slices on it next to each other. Put the second layer of biscuits on the strawberries, spread the remaining cream on them, and place the rest of the strawberries on top. Store the tiramisu in the fridge for a few hours to make the cream firmer and the biscuits softer.

Good to know when making strawberry tiramisu.
The strawberry infusion can also be prepared with strawberry jam. The jam should first be warmed up, cooled down and when it is cold, you can soak the biscuits in it.
Before putting the tiramisu in the fridge, I wrap the tin with the cake in cling film or aluminium foil. It is necessary to cover this dessert, otherwise the cream will pick up the smells from the refrigerator.
