A fluffy and fruity sponge roll with apples is an idea for a cake that always works. This sponge roll cake is made from eggs, flour and sugar. A little salt and baking powder are added to these ingredients as well. After baking, the sponge cake is covered with cooked apples with an addition of lemon jelly then folded into a roll. Ingredients for sponge roll with apples.
- 5 eggs size “M”
- a pinch of salt
- 150 g all-purpose flour
- 180 g icing sugar + a little for dusting the roll
- 1/2 teaspoon of baking powder
- 800 g apples (weight after peeling)
- 200 ml water
- a packet of lemon jelly (75 g)
How to make sponge roll with apples.
Separate the egg whites from the yolks, then put them in a bowl and add a pinch of salt. Whisk until the egg whites form a fluffy foam. At this point, start adding the icing sugar in small batches. Then, also in small amounts, stir in sifted flour with baking powder, and egg yolks mixed with a fork. Adding the flour and yolks should be done interchangeably: once a little bit of yolks, and then a little bit of flour should be added. Line the baking tin with baking paper, pour in the cake batter and put it in an oven preheated to 180 degrees Celsius. Bake for 25 minutes. Remove the baked sponge cake out of the oven, let it rest for 5 minutes, then cover it with a kitchen cloth and roll it up. Set it aside for 2 hours.
Cut the peeled apples into large cubes, put them in a pot and pour water over them. Cook over a medium heat for a few minutes. The water from the apples should almost completely evaporate, and the apples should be soft. Then, remove the apples from the heat, add the jelly powder and stir until it dissolves and merges with the apples. Cool it down.
Folding the roll: roll out the cold sponge cake, cover it thoroughly with the thickening apples and carefully fold it into a roll. Put the roll in the fridge for 2-3 hours. Before serving, sprinkle it with icing sugar.

All ingredients used to prepare the sponge cake should be at room temperature.
After covering the sponge cake with apples and rolling it, I wrap it in a kitchen cloth or aluminium foil and put it in the fridge. Such wrapping allows the roll to keep its shape.
