Simple plum cake

A simple cake with plums made with Greek yoghurt, eggs, flour and powdered sugar. This cake is fluffy, light and moist, perfect for dessert. Plum season is in full swing, so I had to use them to bake something sweet. Cakes with plums, as well as all cakes with fruit, are very popular in my home. I make both gluten-free cakes, for which I use these fruits, and cakes made with wheat flour, which is known to contain gluten. This delicious plum cake is very easy to prepare. First, I beat the eggs with sugar and salt in a bowl, then add the liquid ingredients, followed by the dry ingredients, orange zest and juice. Thanks to the addition of orange zest and juice, this cake has a fantastic smell, and the citrus aftertaste is also slightly noticeable. After that, I put the plums cut into pieces on top of the cake batter, but I do not press them into it, because during baking they will fall down a bit. I bake the yoghurt cake with plums in a rectangular baking tin for about 40 minutes, then cool it down and sprinkle with powdered sugar. Ingredients for simple cake with plums.

  • 300 g all-purpose flour
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of soda
  • 300 g powdered sugar
  • 1/4 teaspoon of salt
  • 3 eggs “M”
  • 250 g Greek yoghurt
  • 180 ml sunflower oil
  • 1/2 teaspoon of orange zest
  • 2 tablespoons of orange juice
  • 300 g plums

Additionally:

  • powdered sugar for sprinkling the cake

How to make simple cake with plums.

Put eggs, powdered sugar and salt in a bowl. Beat for 5-6 minutes or until the mass becomes fluffy. Then, while whisking all the time, pour in the oil, Greek yoghurt, then add the sifted flour mixed with baking powder and baking soda, orange zest and juice. Quickly combine all ingredients.

Line a baking tray with baking paper and pour the yoghurt cake batter into it. Place the plum slices on top of the cake batter, with the skin side down, leaving a small space between each plum slice. Insert the plum cake in the oven preheated to 180 degrees Celsius for 35-40 minutes. Remove the baked cake from the oven and let it cool completely, then finally sprinkle it with powdered sugar.

Good to know when making simple cake with plums.

All the ingredients used to prepare the cake batter should be at room temperature.

I prepared the cake batter using a kitchen mixer. I added the dry ingredients to the eggs beaten with yoghurt and oil at once and mixed them also with a mixer.

I baked the cake in a 30 by 21 centimetre rectangular baking tin for exactly 40 minutes.

I washed the plums, pat-dried them with a paper towel, then cut each one into four parts. They can also be cut into smaller pieces.
