Russian donuts are sweet delicacies made from yeast dough. Having a little hole in their middle, their shape resembles tires. These donuts are not filled with jam or chocolate, they are just sprinkled with caster sugar. They are very light and soft on the inside.
Ingredients for donuts.
- 300 g all-purpose flour + a bit for dusting the pastry
- 15 g fresh yeast
- 50 g icing sugar + a little for dusting the donuts
- 1 big egg
- a pinch of salt
- 50 g unsalted butter
- 125 ml lukewarm, sparkling water
- sunflower oil for frying
Ingredients for Russian donuts.
Sift the flour and put it into a bowl. Combine the yeast with 1 tablespoon of icing sugar, 1 tablespoon of flour and half of theabove-mentioned amount of water in a cup. Set aside for 10 minutes to rise. Melt the butter and cool it down.
Add salt, water, egg, liquid butter, icing sugar and leavened yeast to the sieved flour in the bowl. Mix, then knead the dough for 8 minutes. Its consistency will be quite loose but this is how it should be, do not add extra flour to it. After that, cover the bowl with a cloth and put it in a warm place for an hour to let the dough rise. Place the risen dough on a pastry board slightly dusted with flour. Roll it out to a thickness of 1 centimetre and cut out round circles from it by using a glass. Make a hole with your fingers in the middle of each circle and stretch it slightly. Leave the donuts to rise for 15-20 minutes. Pour the oil into a wide pan and heat it up. When the oil is hot, reduce the heat to medium and put on the donuts. Fry them on both sides until golden brown. Put the fried donuts on a paper towel to drain the excess oil then sprinkle with icing sugar.
Good to know when making Russian donuts.
When putting the donuts in the oil, their top part should go in the oil first.
If you do not have slightly carbonated water, use regular still water.
From the amounts of the ingredients mentioned above, I managed to make 14 donuts.
I used a cup with a diameter of 7 centimetres.
