The first thing that you need to do is combine yeast with lukewarm milk, then once they have risen, add the remaining ingredients and leave the pancake batter to rise. - 120 g all-purpose flour
- 10 g fresh yeast
- 1 egg “L”
- 200 ml lukewarm milk
- 150 g pumpkin puree
- a pinch of salt
- 1,5 tablespoon of crystal sugar
- 1/4 teaspoon of cinnamon
- 150 g plums
- icing sugar for sprinkling the pancakes
- clarified butter for frying
How to make pumpkin pancakes with plums.
Put the yeast into a cup, add lukewarm milk to it and stir, then set it aside for 10 minutes. Pour the risen yeast, crystal sugar, salt, pumpkin puree, cinnamon and egg into a bowl. Beat with a hand whisk for a few seconds, and after that add the sifted flour. Whisk until there are no lumps in the batter. Leave the finished batter aside for 20-25 minutes to let it rise a little.
Wash each plum, dry it and cut it into medium-sized pieces.
Put a small amount of clarified butter on a frying pan, melt and warm it up. Use a spoon to pick up the leavened yeast batter and place it on the hot butter in the pan, forming small pancakes out of it. Next, put the plum pieces on top of the batter, lightly pressing them into the batter with your fingers. Fry the pumpkin pancakes with plums over a medium-high heat until golden brown on both sides. Transfer the fried pancakes on a plate lined with a paper towel. Serve the pumpkin pancakes sprinkled with icing sugar.

I fried my pancakes in clarified butter. However, if you do not have any at home, replace it with vegetable oil or coconut oil. I normally put only a little butter on the frying pan, because I don’t want the pancakes to swim in it.
