Soft and fluffy pumpkin pancakes with plums are a great option for breakfast or dinner. Their preparation is also very easy. The first thing that you need to do is combine yeast with lukewarm milk, then once they have risen, add the remaining ingredients and leave the pancake batter to rise. I mix the ingredients of the pancake batter with a hand whisk or a hand mixer. When the batter has risen, I scoop it up with a spoon and put it on hot butter. I place pieces of plums on top of the batter and fry the pancakes until golden brown on both sides. I serve the pumpkin pancakes sprinkled with icing sugar on top. How to make pumpkin pancakes with plums.
Put the yeast into a cup, add lukewarm milk to it and stir, then set it aside for 10 minutes. Pour the risen yeast, crystal sugar, salt, pumpkin puree, cinnamon and egg into a bowl. Beat with a hand whisk for a few seconds, and after that add the sifted flour. Whisk until there are no lumps in the batter. Leave the finished batter aside for 20-25 minutes to let it rise a little.
Wash each plum, dry it and cut it into medium-sized pieces.
Put a small amount of clarified butter on a frying pan, melt and warm it up. Use a spoon to pick up the leavened yeast batter and place it on the hot butter in the pan, forming small pancakes out of it. Next, put the plum pieces on top of the batter, lightly pressing them into the batter with your fingers. Fry the pumpkin pancakes with plums over a medium-high heat until golden brown on both sides. Transfer the fried pancakes on a plate lined with a paper towel. Serve the pumpkin pancakes sprinkled with icing sugar.
Good to know when making pumpkin pancakes with plums.
Pancakes can be served sprinkled with icing sugar mixed with a pinch of cinnamon.
I fried my pancakes in clarified butter. However, if you do not have any at home, replace it with vegetable oil or coconut oil. I normally put only a little butter on the frying pan, because I don’t want the pancakes to swim in it.
Any variety of plums can be used in these pancakes. They can also be replaced with apples or pears, cut into pieces.
The recipe for homemade pumpkin puree can be found HERE. I usually make quite a lot of pumpkin puree and store it in the freezer. When I want to use it for cakes, pancakes or pasta, I take them out of the freezer a little earlier and defrost beforehand.
