A simple pound cake with redcurrant is a great way to combine soft fruit with cake batter. I make this redcurrant cake with butter, but you can also make it with margarine. The batter made with butter has a more delicate taste. I start the preparation of the pound cake batter by rubbing the soft butter with powdered sugar and a pinch of salt. The well mixed ingredients should have a creamy consistency, and the whole mass should be almost white. Next, I add eggs to the creamy ingredients, not all at once, but one at a time, while mixing constantly. At the end, I add cake flour mixed with baking powder, orange peel, and then I pour in milk.

After that, I line a baking tin with parchment paper, although you can also grease the tin with margarine and sprinkle it with breadcrumbs. Then I pour the cake batter into it, on top of which I arrange the redcurrant fruit. I bake the cake in an oven preheated to 180 degrees Celsius for over 40 minutes, cool it down and sprinkle with powdered sugar before serving. This pound cake is fantastic when served for dessert. Ingredients for pound cake with redcurrant.

  • 200 g butter or margarine
  • 240 g cake flour
  • 4 eggs “L”
  • 200 g powdered sugar
  • 1/2 teaspoon of orange zest
  • 1 teaspoon of baking powder
  • a pinch of salt
  • 60 ml milk
  • 100 g redcurrant

How to make pound cake with redcurrant.

Put the soft butter, powdered sugar and a pinch of salt in a bowl and rub until fluffy and creamy. Next, add one egg at a time, while rubbing all the time. After that add the grated orange peel, flour and baking powder sifted through a sieve, and finally pour in the milk. Line a baking tin with baking paper and pour the cake batter into it. Level the batter with a spoon and when it is leveled, place the redcurrant on top of it. Preheat the oven to 180 degrees Celsius, and when hot, put the tin with the cake in. Bake the cake for 40-45 minutes and when baked, put it on a metal rack and let it cool down. Sprinkle the cake with powdered sugar.
