In my opinion, the best oatmeal cookies are those with raisins. This is the combination I have mostly been familiar with, an which I usually prefer making. Of course, everyone has their own preference and might fancy different ingredients added in oatmeal cookies, such as chocolate chips or nuts. So, it all depends on individual tastes and preferences.
Cinnamon-scented, soft oatmeal cookies are a sweet option not only for dessert but also for breakfast and supper. These cookies are easy to prepare and not very labour-intensive, especially if you make them using a kitchen mixer. Start preparing the cookies by creaming soft butter with sugar. When ready, add the egg, vanilla and mix for a while, then add the dry ingredients including the oats, salt, baking soda, cinnamon, flour and raisins. After combining all the ingredients, cool the dough in the refrigerator, then shape it into small balls, flatten them and bake at 180 degrees Celsius for about 20 minutes. Ingredients for oatmeal and raisin cookies.
- 200 g rolled oats
- 150 g light brown sugar
- 1 teaspoon of vanilla extract
- 1 teaspoon of cinnamon
- 1/2 teaspoon of salt
- 1 egg “M”
- 150 g soft butter
- 100 g raisins
- 3/4 teaspoon of baking soda
- 150 g all-purpose flour
How to make oatmeal and raisin cookies.
Put soft butter into a bowl, add brown sugar, and cream together for 4-5 minutes. Next, add the egg and vanilla extract and mix for a minute. After that, add the sifted flour, salt, cinnamon, baking soda and oatmeal and mix for 2 minutes. Finally, add the raisins and mix for another minute. Place the cookie dough in a bowl, wrap it in foil and place it in the fridge for an hour. After taking it out of the fridge, scoop the dough with a spoon, form it into balls and place them on a baking tray. Flatten the dough balls slightly with your hand, then place the baking tray with cookies in the oven preheated to 180 degrees Celsius for 18-20 minutes.

The weight of each dough ball is approximately 55 g. The given amounts of ingredients will produce 15 cookies.
Once you take the dough out of the fridge, you should work quickly on it. If work a bit too long, and they become warm and soft when they are already shaped into balls but not yet placed in the oven, it is a good idea to put the dough balls in the fridge for 15 minutes.
All ingredients used to prepare the cookie dough should be at room temperature.
Store the baked cookies in a tightly closed container for up to 3-4 days at room temperature.
