No-bake cakes are a great way to make a sweet dessert that doesn’t require an oven to prepare. The basis of most no-bake cakes is butter cookies or biscuits, which usually replaces the sponge cake. These cakes can contain fruit, whipped cream, favourite cream, cheese, yoghurt, jelly, nuts, and chocolate. In fact, it would take a long time to mention it all, as most of the products used in regular cakes also work well in no-bake cakes.

So if you want to make a quick cake that does not require baking, try the following recipe for a blueberry cake without baking. In this cake, you will find dulce de leche combined with mascarpone cheese and whipped cream, ladyfingers and fresh blueberries. Preparing the cake will take you about 15 minutes, which is also a plus of this dessert.

Ingredients for no-bake blueberry cake.

  • 125 g fresh blueberries
  • 250 g mascarpone cheese
  • 200 g dulce de leche + 2 tablespoons
  • 300 ml whipping cream (36%)
  • 14 g powdered gelatine
  • 80 ml water
  • 15 ladyfinger biscuits
  • 50 g grated milk chocolate

How to make no-bake blueberry cake.

Put gelatine into a bowl, pour water over it and set it aside for 10 minutes. After that, heat it up a little, mix and set it aside to cool it down. Then, combine the cool but still liquid gelatine with the dulce de leche.

Whisk the cream in a bowl, it should be well whipped but not stiff. Add mascarpone to it and whisk together for 30 seconds. Then, add the dulce de leche previously combined with the gelatine and whisk until everything is well combined and starts to thicken. This should take about a minute.

Carefully cover a rectangular tin with cling film. The foil should protrude a lot beyond the edges of the tin so that the finished cake can be wrapped tightly. Place the first row of ladyfingers on the bottom of the tin and cover it with 2 tablespoons of dulce de leche. Subsequently, pour out half of the setting cream and place a second layer of biscuits on top of it. Cover the biscuits with the remaining cream. Decorate the top of the cake with blueberries and sprinkle with grated chocolate. Wrap the cake with cling film and put it in the fridge for at least an hour.

Good to know when making no-bake blueberry cake.

I prepared the cake in a tin which measured 30 by 11 centimetres. You can use a longer or slightly shorter tin, but it is important that it should be relatively high. Depending on the size of the tin, more or fewer pieces of ladyfingers may be needed.
