Sugar foam known commonly as marshmallow, is nothing but a sweet foam made from water, glucose syrup and gelatine. Marshmallow has its roots, of course, in the United States. In Poland, sugar marshmallows have been adopted not so long ago. I remember my aunt ages ago sending me colourful marshmallows from the States. As a child, I didn’t really know what to do with it, what it is 🙂 The consistency of the marshmallows seemed to be completely out of what I used to and it did not fit into the canon of Polish candies.
At the moment, either my tastes have changed or I don’t care what kind of sweets I eat, because from time to time I go for a small marshmallow foam, e.g. a strawberry one. It was like that the last time as well when I baked muffins. I didn’t want to make standard ones and opted for a marshmallow addition.

Ingredients for muffins with marshmallow.
- 110 g margarine
- 2 eggs
- 150 ml milk
- 250 g all-purpose flour
- 120 g light brown sugar
- 1 teaspoon of baking powder
- 1 cup of chopped marshmallow (60 g)+ 12 whole ones for decorating the muffins
Additionally: paper muffin cases
How to make muffins with marshmallow.
Cut the sugar marshmallows into small cubes.
Pour sugar into a bowl and add butter to it. Rub until smooth and fluffy. Then, add the eggs one at a time, pour in milk, sifted flour, baking powder and the diced marshmallows. Mix it all thoroughly.
Pour the muffin batter into paper muffin cases placed in a muffin mold. Bake the muffins in an oven preheated to 170 degrees Celsius for 25 minutes. After removing from the oven, put additional sugar foam on top of each muffin.

Good to know when making muffins with marshmallow.
The marshmallows will melt significantly during baking. This is normal as they are made of sugar.
For my muffins, I used tall and narrow muffin molds.
I got 12 muffins from given ingredients.
