This moist and fluffy mayonnaise babka is perfect not only for Easter, but also for other days without any occasion. The basis of this babka is a batter based on flour, eggs, sugar and, as the name of the recipe suggests, mayonnaise. Mayonnaise is nothing more but a mixture of oil and eggs, so when adding mayonnaise to the babka batter, you do not have to add any other fat. The baked babka can be decorated with icing or sprinkled with powdered sugar. Additionally, it looks beautiful when sprinkled with colourful sugar sprinkles. Ingredients for mayonnaise babka.

  • 4 large eggs
  • 2 large egg yolks
  • 1/2 teaspoon of salt
  • 150 g powdered sugar
  • 1 and 1/2 teaspoon of baking powder
  • 120 g cake flour
  • 80 g potato flour
  • 180 g mayonnaise
  • 1 teaspoon of grated orange zest


  • 120 g powdered sugar
  • 25 g orange juice


  • 2 tablespoons of breadcrumbs
  • margarine for greasing the baking tin
  • sugar sprinkles

How to make mayonnaise babka.

Put the eggs, yolks, salt, grated orange zest and powdered sugar into a bowl. Using a kitchen mixer, hand robot or hand mixer, whisk the ingredients for about 5-6 minutes. Next, add mayonnaise and whisk for about 30 seconds. Then, add both flours and baking powder sifted through a sieve – not at once, but in two rounds, and mix gently with a spoon or spatula.

Use a baking tin with a chimney, and grease it with margarine and sprinkle with breadcrumbs. Pour the babka batter into the prepared tin. Place the tin with the batter in the oven preheated to 180 degrees Celsius and bake the babka for 35-37 minutes. After baking, turn off the oven, open the door halfway and leave the babka for 15 minutes. Only then remove it from the oven and place it on a metal rack or leave it in the tin and cool down.

Pour the powdered sugar sifted through a sieve into a bowl, pour in the orange juice and mix with a kitchen mixer for 2-3 minutes. Spread the icing on the cooled babka and sprinkle it with sugar on top.

Good to know when making mayonnaise babka.

I bake the babka in a tin with a diameter of 23 centimetres. The tin has a chimney in the middle.

Use eggs mayonnaise in this recipe.

When making this particular babka, I sprinkled the baking tin with what turned out to be quite coarsely ground breadcrumbs, as you can see in the photos attached to the recipe. If you decide to sprinkle the tin with breadcrumbs, use finely ground breadcrumbs. You can leave the form greased only with margarine or use a little wheat flour instead of breadcrumbs.
