Fried bananas in pancake batter is a simple dish that can be served both as a dessert or dinner. To make bananas in pancake batter, you only need generally available ingredients. The batter which covers the bananas has a texture similar to pancake batter, but it is much denser. This batter is made by combining milk with flour, egg and additions such as sugar, salt and baking powder. Medium-sized pieces of bananas land in the finished batter. - 100 g all-purpose flour
- 80 ml milk
- 1 big egg
- 1/2 teaspoon of baking powder
- 1 teaspoon of crystal sugar
- a pinch of salt
- 1/4 teaspoon of vanilla extract
- 300 g bananas
- oil for frying
- icing sugar for dusting the fried bananas
How to make fried bananas in pancake batter.
Crack an egg into a bowl, add milk, salt, sugar, vanilla extract, baking powder and sifted flour. Using a hand whisk, combine all the ingredients into a smooth, uniform batter. Put the finished batter aside for 15 minutes.
Peel the bananas and cut them into 3 cm pieces.
Pour oil into a fairly wide pot – there should be enough of it for the bananas to float freely in it. Put the pot on the heat and warm it up. Put each banana on a small toothpick, dip it in the pancake batter and place it in the hot oil. Fry over a low heat until the batter is well fried on both sides. Put the fried bananas on a plate lined with paper towels. Before serving, sprinkle the bananas with icing sugar.

I recommend using quite firm, unripe bananas. Their consistency works best once fried.
