I like eating my biscuits with a cup of tea. Even more, I like to soak them in the same hot tea and eat them soft and warm. Of course, not all cookies are suitable for soaking in tea. If cookies are filled with cream or jam, it is better not to soak them. Biscuits with dried fruits, chocolate or nuts are perfect when served with tea or milk.
In the recipe below I combined flour with sugar, butter, white chocolate, macadamia nuts and cranberries. This way I made delicious crunchy cookies. I baked a whole pile of them as I also gave many of them away to my family. I wrapped them in a decorative foil and tied them with a bow. They looked great.
Ingredients for macadamia cookies.
- 250 g all-purpose flour
- 1 teaspoon of soda
- 1/2 teaspoon of baking powder
- 160 g unsalted butter
- 120 g crystal sugar
- 100 g light brown sugar
- 1 egg
- 50 g white chocolate
- 50 g dry cranberries
- 70 g macadamia nuts
How to make cookies with macadamia nuts.
Put the diced butter into a bowl, add crystal sugar, brown sugar then rub them until smooth. Next, add the egg, then the flour, salt, baking powder and baking soda. Finally, add the diced white chocolate, roughly sliced nuts and cranberries. Knead the cookie dough with your hands.
Form three centimetre wide balls from the cookie dough, then flatten them on your hand to a thickness of two centimetres. Place the cookies on a baking try and transfer into an oven preheated to 175 degrees Celsius for 25 minutes.
Good to know when making cookies with macadamia nuts.
You can replace macadamia nuts with other types of nuts, such as cashews or hazelnuts.
Instead of cranberries, you can use dried raisins.
If you want to get quite large biscuits, form larger balls from the cookie dough. I wanted my cookies to be medium-sized and not too big hence I formed medium-sized balls from the dough.
