The wafer with chocolate in this recipe was often made by my grandmother and I ate it like crazy when I was a kid. She was using cream made from homemade cow’s milk.
These days I make the wafer by myself. Recently, I’ve made it for my husband who had never had it before. He seemed to be really enjoying it, so I will have to make it again soon – I have no problem with that though 🙂
Ingredients for wafer.
- 200 g crystal sugar
- 125 g margarine or butter
- 550 ml sour cream (18%)
- 50 g cocoa
- 1 packet of wafer sheets (The one I used weighted 200 g)
How to make wafer with chocolate cream.
Put the crystal sugar, diced margarine, cocoa and sour cream into a pot. Bring to a boil then simmer for an hour and ten minutes, stirring often. Let it cool down but not completely.
Place the first piece of wafer sheet on a board, pour some of the chocolate cream on it and spread it evenly. Repeat this step as many times as there are wafer sheets. The topmost wafer should remain uncovered. Put an aluminium foil on top of the wafer and place a wooden cutting board on it. Place it in the fridge for at least three hours. Serve cut into squares.

Sour cream is the best cream to use for the preparation of the chocolate cream.
While boiling, the chocolate must be constantly stirred, otherwise it may burn.
