I often layer cakes and desserts with cream. If it’s chocolate cream, I make it in two different ways. The first type of chocolate cream that I prepare is based on custard, whereas the second one on mascarpone cheese. The first is definitely heavier than the second, but it is perfect for cakes that are decorated with fondant. The chocolate cream that I make based on mascarpone cheese is lighter and is suitable for layering sponge cakes, cupcakes and for desserts in a cup. Ingredients for chocolate cream.

  • 400 ml whipping cream (36%)
  • 250 g mascarpone cheese
  • 100 g milk chocolate
  • 100 g dark chocolate
  • 40 g butter
  • 40 g icing sugar

How to make chocolate cream.

Pour 200 ml of heavy cream into a pot, add butter, icing sugar and bring it to a boil. Next, remove the pot from the heat, add milk and dark chocolate pieces. Stir until the chocolate is completely melted, then cool down everything.

Pour 200 ml of cold whipping cream into a large bowl and whisk until semi-stiff. After that, add mascarpone to it and continue whisking for few more seconds. Finally, pour in the cold, liquid chocolate from the pot and whisk the whole thing until the cream thickens. Chill the finished cream in the refrigerator.

Good to know when making chocolate cream.

You can use just milk or just dark chocolate in this recipe. A cream that is made only with the addition of milk chocolate is not as stiff as the one to which dark chocolate is added. This is one of the reasons I use both types of chocolate when making my cream.
