Baking fruit cakes in the winter requires considering the availability of some fruits, as during this period it might be quite limited. You can still buy fresh strawberries, blueberries or raspberries, but they do not taste the same as those bought during the season. The lack of taste of these fruits is the main reason I usually go for apples or bananas during the winter, and I try not using other fruits. I use apples for cakes, but also for salads.
I baked this apple and chocolate cake last Saturday. It turned out perfectly fruity thanks to the usage of soft and juicy apples. On top of that, the cake was fluffy and chocolatey thanks to the addition of cocoa and the chocolate glaze.

Ingredients for chocolate cake with apples and almonds.
- 6 big apples
- 300 g all-purpose flour
- 5 eggs
- 250 g margarine
- 1 teaspoon of vanilla extract
- 1 tablespoon of dark cocoa
- 2 tablespoons of milk
- 250 g icing sugar
- 1 teaspoon of baking powder
Chocolate glaze:
- 5 tablespoons of each: water, unsalted butter, dark coca, crystal sugar, almond flakes
How to make chocolate and apple cake.
Peel the apples and cut them in half. Place each half on a baking tray lined with baking paper. Put the tray in an oven preheated to 180 degrees Celsius for 30 minutes. Remove the baked apples from the oven and let them cool down.
Put soft margarine in a bowl, add icing sugar to it and rub until fluffy. When the margarine and the sugar are mixed very well, add the egg yolk one at a time. Then, in small batches, add the sifted flour, baking powder and vanilla extract.
In a separate bowl, whisk the egg whites until soft peaks are formed. Once done, gently stir them into the cake batter in the other bowl.
Divide the cake batter into two parts. Add milk and cocoa to one of the parts and mix.
Line the baking tray with baking paper. Pour in the light cake batter and place the baked apples on it. Pour the dark cake between the apples.
Put the baking tin in an oven preheated to 180 degrees Celsius and bake for 50 minutes. Once baked, let the cake cool down.
Chocolate glaze: put margarine, sugar, cocoa and water into a pot. Stir and bring it to a boil over a medium heat. From the moment it starts to boil, keep it on the heat for two minutes, stirring constantly.
Cover the cake with liquid chocolate glaze and sprinkle with almond flakes.

I used soft and juicy apples. They baked quickly and tasted great in this cake.
