Candied orange peel
Candied peel is an addition that works great in cakes and desserts. Homemade candied peel is very easy to make and you can use a variety of citrus fruits to make it from. Citrus fruits that are great for candying are orange, lemon, lime and grapefruit. Before using, it is necessary to wash and scrub them very thoroughly, and then cut off the peel from the fruit, trying to leave as little of the white layer underneath as possible. This white layer must be removed as it is what gives the skin its bitterness. Cut the cleaned orange peel into small cubes or thin strips, boil it twice in clean water and, in the last stage, fry it in sugar. Store the peel in the refrigerator in a tightly closed jar. Ingredients for candied orange peel.
- 100 g orange peel
- 450 ml water
- 200 g crystal sugar

How to make candied orange peel.
Cut the orange peel into small cubes, put it in a pot, pour in 150 ml of water, bring it to a boil and simmer for 10 minutes, stirring occasionally. Next, pour off the water, put back the peel in the pot, pour in 150 ml of clean water, bring it to a boil and simmer again for 10 minutes over a low heat.
As before, pour off the water and put the peel in the pot, pour in the remaining water, add sugar and bring it to a boil. Simmer for the first 20 minutes over a low heat, stirring occasionally. Afterwards, increase the heat to medium tending to high, and start candying. Stir the frying peel very frequently at this stage to prevent it from burning. Fry the peel in the sugar syrup for 10-12 minutes, constantly checking whether the sugar syrup is not getting too thick – the syrup should be thick but liquid.
Pour the fried peel onto a strainer, stir with a spoon and then spread it on baking paper, trying to separate the individual pieces. Set the peel aside to cool for 15 minutes and when cold, transfer it to a jar or glass container. Keep in the refrigerator.

Good to know when making candied orange peel.
I used the peel of 2.5 large oranges. First, I washed the oranges well under hot water and scrubbed them with a dish sponge. The weight of the peel given in the list of ingredients is the weight of the peel cleaned of albedo (the white part under the peel) and ready for use.
I cooked the orange peel in a small pot on a small burner. If you cook it on a medium-sized burner, you must reduce its power accordingly.
When placing te fried orange peel on the baking paper, be careful not to burn yourself. It is best to do this with a fork or tongs.
