Bilberry brioches

Finally, it’s time for bilberries. Every time I make these brioche buns, they disappear in the blink of an eye. I make the buns with forest berries, as the name of these rolls suggests. To start the preparation, I first make the yeast dough, which, after kneading and rising, I divide into smaller parts. I fill each of them with bilberries mixed with sugar and pudding powder. Once filled, I sprinkle sugar, flour and butter crumble on top of each brioche. I bake these simple bilberry brioches at 180 degrees for about 25 minutes or until they are slightly browned.

Ingredients for bilberry brioches.

  • 350 g flour
  • 1 egg “M”
  • 50 g soft butter
  • 20 g fresh yeast
  • 30 g powdered sugar
  • 150 ml lukewarm milk
  • 1 teaspoon of vanilla extract

Additionally:

  • 100 g bilberries
  • 1/2 tablespoon of crystal sugar
  • 1/2 tablespoon of pudding powder
  • 1 egg for brushing the brioches

Crumble:

  • 40 g flour
  • 20 g butter
  • 20 g powdered sugar

How to make bilberry brioches.

Start the preparation of the bilberry brioches by making the crumble. Combine flour with soft butter and powdered sugar in a bowl.

Put the yeast in a separate bowl, and add lukewarm milk, powdered sugar and two tablespoons of flour. Stir, and cover with a cloth and leave it to rise for 10 minutes.

Sift the remaining flour into a separate bowl, add the risen yeast, egg, vanilla and mix. Then add the soft butter and knead the dough. Knead the dough for about 8 minutes, then cover the bowl with the dough with a kitchen cloth and leave it in a warm place to rise for at least an hour.

Divide the risen dough into 7-8 parts, then form each one into a ball, and flatten them in the palm of your hand. Mix bilberries with pudding powder and sugar. Place about a tablespoon of bilberries in the center of each flattened ball , then stick the dough together, so that the bilberries are tightly closed in it. Give the buns an oval shape by forming them with your hands, then place them on a baking sheet, cover with a cloth and leave them to rise for about 25 minutes. Brush the risen brioches with a beaten egg and sprinkle with crumble. Put the buns in the oven preheated to 180 degrees Celsius for about 25 minutes.

Good to know when making bilberry brioches.

The egg, flour and powdered sugar used to prepare the yeast dough should be at room temperature.

Bilberries can be made with both fresh and frozen fruit. It is better not to defrost frozen berries before putting them in the dough, because they will release the juice and it will be worse to combine them with the dough.

I didn’t fill my brioches with a lot of berries, but if you like, you can use a bit more of them than the one I gave in the list of ingredients. In general, you have to be careful with the amount of berries, because too much will make the buns wet with juice.
