Ingredients for brioche with crumble.

  • 8 g instant yeast
  • 700 g all-purpose flour
  • 4 large eggs
  • 80 g powdered sugar
  • a packet of vanilla sugar (16 g)
  • 100 g melted butter cooled
  • 280 ml lukewarm milk

How to make brioche with crumble.

Pour the sifted flour, powdered sugar, instant yeast, vanilla sugar, lukewarm milk and eggs into a bowl of a kitchen mixer. Knead for about a minute, then pour in the liquid, cooled butter and continue kneading for 10-12 minutes. Next, cover the bowl with the dough with a cloth and set the dough aside to rise for about two hours. Place the risen dough on a baking tray lined with baking paper, smooth it out with your hand, sprinkle with crumble, cover with a kitchen cloth and leave it to rise for about an hour. Place the baking tray with the dough in the oven preheated to 180 degrees Celsius for 35 minutes. Let the baked brioche cool completely before slicing.

Good to know when making brioche with crumble.

I baked the brioche in a rectangular baking tray measuring 25 by 37 centimetres.

This yeast dough is quite sticky, but you should not add additional flour to it. When placing the dough on the baking tray, you can lightly grease your hands with oil or liquid butter.

The instant yeast can be replaced with fresh yeast. In such a case, you should use 50 g.
