Pancakes are fried cakes made from batter prepared with milk, flour, eggs and yeast. Many pancake recipes include yogurt, kefir or buttermilk instead of milk. You can make plain pancakes, but most often the dough is combined with fruit. The most popular and probably most well-known ones are pancakes with apples, but pancakes with plums or with strawberries are also quite common. Fried pancakes are usually served in a very simple way, sprinkled with icing sugar. A good addition to pancakes can be whipped cream or sour cream, icing sugar with cinnamon or chocolate sauce.
Yeast pancakes with plums are pancakes that will work well for breakfast, dessert and lunch. I start their preparation by warming the ingredients for the yeast batter. Cold milk or yeast will prevent the dough from rising nicely. In fact, as long as the ingredients are at the right temperature, all I do is throw them into a bowl and whisk them with a whisk. I leave the batter to rise for a few minutes. When the batter is ready, I put halved plums into it, cover it well and put it on hot oil. I don’t put all the plums in the batter at once, but only one half at a time. When I put them on the heat, I fry the pancakes until golden brown on both sides and serve warm, sprinkled with icing sugar. Ingredients for yeast pancakes with plums.
Yeast dough:
- 15 g fresh yeast
- 1 tablespoon of crystal sugar
- 1/4 teaspoon of salt
- 250 ml lukewarm milk
- 220 g all-purpose flour
- 1 egg “M”
Fruit:
- 5 big plums
- 2 tablespoons of flour
Additionally:
- oil for frying
- icing sugar for dusting the pancakes
How to make yeast pancakes with plums.
Put the yeast, sugar, salt, lukewarm milk, flour and egg into a bowl. Whisk for a while with the hand whisk. The ingredients should be well mixed and there should be no lumps in the batter. Cover the bowl with the yeast batter with a kitchen cloth and let the dough rise for about 25 minutes.
Wash the plums, dry them with a paper towel, cut them in half lengthwise, remove the pips and sprinkle each half of the plum with flour. Pour a large amount of oil into a wide frying pan, heat it up and, when hot, reduce the heat to medium. Thoroughly coat the plums in the yeast batter and immediately place them in the hot oil. Fry until golden brown on both sides, for about 6-7 minutes. Put the fried yeast pancakes with plums on a plate lined with a paper towel, so that they drain off the excess oil. Serve the pancakes warm, sprinkled with icing sugar.

Good to know when making yeast pancakes with plums.
You can replace the fresh yeast with instant dry yeast – about 5-6 grams of it should be enough. I was using fresh yeast, which after removing it from the fridge, I set aside for about 15 minutes to warm it up a bit.
All the ingredients, except milk, used to prepare the pancake dough should be at room temperature. The milk should be lukewarm.
