I can’t imagine excluding eggs from my diet. I like them in any form, I often use them for salads, cakes, spreads, frying, cooking and making a lot of various dishes from them.

Of course, everything has its limits so I don’t eat five hard-boiled eggs for breakfast every day but one soft-boiled egg every other day :D. Also, making scrambled eggs during weekends happens quite often at my home. Eating them too frequently prepared the same way, it can become boring, therefore it is worth changing the way they are prepared or served.

This time, I prepared scrambled eggs with chives and mushrooms and served them in toasted rolls.

Ingredients for scrambled eggs.

  • 8 eggs
  • 4 rolls
  • 1 spring onion
  • a pinch of salt
  • a pinch of black pepper
  • 100 g of mushrooms
  • 4 tablespoons of butter
  • 50 ml of cream (double cream or cooking cream)

How to make scrambled eggs in a roll.

Put a tablespoon of butter in a pan and add the sliced mushrooms. Fry over a medium heat until the mushrooms are tender. Afterwards, transfer them to a bowl.

On the same pan place three tablespoons of butter and melt it. Break the eggs into a separate bowl, add a pinch of salt and finely chopped chives (you can leave a bit of chives for sprinkling the scrambled eggs later). Break them gently with a fork.

Pour the eggs over the melted butter. Fry over a medium heat, stirring constantly. When the eggs start coming together, pour in the cream. Fry until you get the consistency you want. I am a fan of quite runny scrambled eggs.

Cut the top of each of the rolls and remove the soft center, leaving just a little of it by the skin. Place the rolls with the cut off tops in the oven set to a grill option. Grill for a few seconds.

Fill the inside of the rolls with the scrambled eggs, sprinkle the top with the fried mushrooms, freshly ground black pepper and a bit of chopped chives.

I used white wheat rolls, which you can, of course, replace with any other rolls.

Instead of grilling the rolls in the oven, you can bake them on a well-heated pan. Don’t add any grease when baking.
