Butternut squash pâté

Butternut squash pâté is a vegetable pâté made from baked butternut squash, cheese and spices. Butternut squash is a large pear-shaped pumpkin with a salmon-coloured skin. I use it much more often than pumpkin because it is not quite as sweet as the latter.

This recipe for butternut squash pâté is easy and one worth trying. The pâté turned out to be creamy, flavoursome and soft. Serve it on toast bread for breakfast or supper.

Ingredients for butternut squash pâté.

  • 500 g butternut squash puree
  • 1 big onion
  • 1 tablespoon of sunflower oil
  • 2 eggs
  • 2 tablespoons of natural joghurt
  • 130 g Gouda cheese
  • 60 g oats
  • 3/4 teaspoon of salt
  • pinch of black pepper
  • 1 teaspoon of dry oregano
  • 70 g slightly spicy green pepper

How to make butternut squash pâté.

Pour the oil into a pan and heat it up. Add finely chopped onion then fry over a medium heat for 2-3 minutes. Add finely chopped green pepper and pumpkin puree. Continue frying for 4-5 minutes, this time over low heat. Remove the fried vegetables from the heat and let them cool down.

Put the cooked vegetables into a bowl. Add grated cheese, oregano, salt, pepper, yoghurt, eggs and oatmeal to it. Blend all the ingredients into a creamy, uniform mixture. Transfer the mixture to aluminium tins then place them in an ovenproof dish with water in it – the water should be two centimetres high.

Put the dish in the oven preheated to 180 degrees Celsius for an hour. Let the baked pâté cool down.

I used two aluminium tins, 18.5 by 8.5 centimetres each.

The green pepper that I used was slightly spicy. It emphasized the taste of the pâté significantly, it made it less bland. If you do not find any slightly spicy pepper, add a standard type of pepper, e.g. Robertina plus a few flakes of chili pepper.
