Avocado and chicken toasts
A delicious dinner is not the only thing you can prepare from chicken meat. Chicken served simply on toast will be great for breakfast and lunch as well.
Depending on the day, sometimes I feel like having a heavy and filling breakfast, sometimes a light one, sometimes savoury and other times sweet. It is not without reason that they say that a woman sometimes cannot decide what she fancies 🙂
I like sweet croissants, buns and sweet toasts. From the heavier stuff, I am a big fan of black pudding and fried eggs. A light breakfast must make me full, but without exaggeration. For me, a light breakfast can consist of lettuce combined with vegetables, fruit or toast with vegetables and cold cuts of meat.
This time I made toasts with avocado and roasted chicken. I seasoned the chicken meat with barbecue sauce and salt. I treated the avocado very gently, only with lemon juice, salt and pepper. Personally, I like the combination of chicken and avocado very much and not only for breakfast.

Ingredients for avocado and chicken toasts.
- 1 big chicken breast
- 2 tablespoons of bbq sauce
- 1/4 teaspoon of salt
- 2 avocados
- a pinch of black pepper
- a pinch of salt
- 1 tablespoon of lemon juice
- 6 slices of toast bread
How to make avocado and chicken toasts.
Rub the chicken breast with 1/4 teaspoon of salt and barbecue sauce, then place it in a pan and fry over a medium heat until it turns lightly brown on both sides. Once cooked, cut the chicken into smaller pieces.
Slice one avocado and mash the second one with a fork. Add lemon juice, a pinch of salt and a pinch of pepper to the mixed avocado and mix it all well.
Place the toast bread slices in a toaster or toast them in a frying pan. Spread the avocado cream on each slice of the toasted bread, put the chicken pieces and avocado slices on top of it. The top of the mini toasts can also be sprinkled with freshly ground pepper and salt.

Good to know when making avocado and chicken toasts.
You can replace the toasted bread with baguette, pita bread or tortilla.
If you don’t have lemon juice, you can use lime juice. However, be sure to use one of them, otherwise the avocado will darken quickly.
