Blueberry ice cream
During blueberry season I always try to eat as much fresh blueberries as possible, but I also freeze and jar some. Out-of-season frozen blueberries are perfect for cakes, tarts, they go well in dumplings as filling or as an addition to pasta. They are also great for shakes and ice cream.
Blueberry ice cream was one of my favourite flavours of ice cream when I was a kid. I remember that they were available in scoops and their taste was simply fantastic. Today, I present you a recipe for blueberry ice cream that has a creamy texture and an intensely fruity flavour. These ice cream are quite sweet so they will appeal to all of these fans of sweet desserts.

Ingredients for blueberry ice cream.
- 200 g fresh or frozen blueberries
- 100 g crystal sugar
- 1,5 tablespoon of lemon juice
- 200 ml heavy cream (36%)
- 100 ml milk
- 3 egg yolks
How to make blueberry ice cream.
Put 25 g of sugar, blueberries and lemon juice into a pot. Bring it to boil, then blend while still warm.
Pour 100 ml of heavy cream into a bowl. Pour the remaining cream (100 ml), milk and the remaining sugar (75 g) into a separate pot. Bring it to boil, while stirring constantly until the sugar dissolves. In a separate bowl, combine the egg yolks. When the ingredients in the pot start boiling, pour a half of the liquid into the yolks, while stirring constantly. Then, pour it to the remaining liquid in the pot and add the previously blended blueberries. Bring it to boil and keep simmering for 2-3 minutes. Take the mixture off the heat and add the 100 ml of cream from the first bowl. Place the pot over a bowl filled with very cold water or ice. Stir the mixture constantly until it cools down, then transfer it into a container and place it in the freezer. After an hour, mix it with a spoon, then leave it for a few hours to freeze completely.

Good to know when making blueberry ice cream.
I used fresh blueberries, however you can also use frozen ones. Frozen blueberries will allow you to prepare ice cream off-season.
The egg yolks that you add to the ice cream must be from previously scalded eggs. To do it, place the eggs for a few seconds in boiling water.
After removing the blueberry mixture from the heat, it is necessary to cool it down by placing its pot over cold water or ice. If you don’t do that, the mixture might split.
To prepare the ice cream, you can use an ice cream maker if you have one, or freeze the mixture directly in a plastic container.
