Do you like the taste of garlic, but sometimes you give up on it because it is too intense? If so, replace the regular garlic with wild garlic and enjoy its flavour without any fear.
Wild garlic is a plant for which the season has just started. I got mine at the grocery store, but you can also collect it in humid forests where this plant grows wild. It has long leaves, and they are a perfect addition to meat dishes, eggs or bread.
Today, I would like to share a recipe with you for bread with wild garlic. To prepare this bread, you will need flour, yeast, margarine and wild garlic as the main ingredients. I opted for a lactose-free version bread hence both the milk and the margarine were plant-based. You can munch this bread with a spread or butter or you can serve it on the side to cream soups.

Ingredients for wild garlic bread.
- 600 g all-purpose flour
- 20 g fresh yeast
- 1 teaspoon of sugar
- 300 ml soy milk
- 1 teaspoon of salt
- pinch of black pepper
- 200 g vegetable margarine
- 40 g fresh wild garlic
How to make wild garlic bread.
Sift the flour into a bowl, add a pinch of salt, pepper and sugar.
Warm up the milk – it should be lukewarm and once ready, dissolve the yeast in it.
Melt the margarine, then cool it down.
Add the dissolved yeast to the bowl with the flour. Stir, then add margarine and finely chopped wild garlic. Knead the dough for about 5 minutes, then cover the bowl with a cloth and set it aside so the dough can rise. It should double its volume.
Transfer the risen dough into a baking tin and place it in a warm place until the dough rises again.
Put the garlic bread into an oven preheated to 180 degrees Celsius and bake for an hour.
Allow the baked bread to cool down before slicing it.

Good to know when making wild garlic bread.
I used a rectangular baking tin measuring 30 by 10.5 centimetres.
You can replace the soy milk with cow’s milk. It is up to you if you wish to use lactose-free or vegan-friendly ingredients.
