Fluffy buns made with kefir and baking powder and soda instead of yeast. Normally, I would make buns with yeast, but unfortunately I ran out of it. I went to the store and the shelf, which usually contains yeast, was empty. I did not want to buy bread in the store, because recently, I’ve only been eating homemade rolls and bread. As I was left with baking powder and soda, I used those to make kefir buns, which I then sprinkled with sesame seeds on top.
Ingredients for kefir buns.
- 450 g all-purpose flour
- 1/2 teaspoon of baking powder
- 1/2 teaspoon of soda
- 1 flat teaspoon of salt
- 1 tablespoon of icing sugar
- 350 g kefir (at the room temperature)
- 1 tablespoon of oil
- 1 tablespoon of sesame seeds
How to make kefir buns.
Sift flour into a bowl. Add salt, baking powder, baking soda, icing sugar and kefir. Knead the dough. Grease your hands with oil, form balls from the dough with a diameter of 5 centimetres each, then place them on a baking sheet lined with baking paper. Sprinkle each ball on top with sesame seeds. Let the buns rest for 10 minutes. Preheat an oven to 190 degrees Celsius. Bake the buns for 20-25 minutes or until they are lightly browned. After baking, let them cool down before cutting.
Good to know when making kefir buns.
Each time you tear off another piece of dough to form a ball, grease your hands with oil.
You can replace the kefir with buttermilk.
Instead of sesame seeds, you can sprinkle the rolls on top with cumin, sweet paprika, fenugreek or poppy seeds.
