Bread without flour is an idea for an original bread that will appeal to all those who have excluded flour from their diet. The basis of this simple bread are canned vegetables, specifically green peas and white beans. After draining each vegetable from the brine, I add eggs, powdered milk, soda, baking powder and salt and mix everything. I pour pumpkin seeds into the prepared bread mixture, mix, pour into a cake tin and bake until its colour gets golden.

Ingredients for flourless bread.

  • 240 g canned white beans (e.g. butterbeans)
  • 150 g canned green peas
  • 3 large eggs
  • 1 flat teaspoon of salt
  • 1 flat teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 40 g pumpkin seeds
  • 40 g powdered milk

How to make flourless bread.

Pour the drained green peas, drained white beans, eggs, baking powder, powdered milk, baking soda and salt into a bowl. Mix using a hand blender until uniform, then add the pumpkin seeds to the mixed ingredients and mix it together. Pour the bread batter into a cake tin lined with baking paper, level the mass with a spoon, then put it in the oven preheated to 200 degrees Celsius and bake for 35 minutes. After baking, let the bread cool and cut it when cold.

I baked the bread in a rectangular baking tin measuring 12 by 21 centimetres.

The pumpkin seeds can be replaced with linseed.
