Arugula, cheese and sun-dried tomatoes salad

Today once again I did one of my favorite salads.

The difficulty level of its preparation is as low as possible 🙂

Arugula, cheese and sun dried tomato salad

I usually make this salad with a mix of arugula and lettuce. This time I did it only with arugula but only because it was the only salad available in the shop where I purchased the ingredients.

This salad can be eaten on its own or it may be an addition to all kinds of different dishes.

  • Ingredients:

    • 1 packet of arugula salad
    • 6 sun-dried tomatoes in olive oil
    • 1 tablespoon of pumpkin seeds
    • 6 tablespoons of cheese (any type e.g. Gouda)
    • 2 tablespoons of olive oil
    • 1/2 teaspoon of Provencal herbs

  • Grate the cheese on large mesh. Cut the tomatoes into strips. Mix the lettuce, the chopped tomatoes, the grated cheese and the pumpkin seeds in a bowl. Mix the olive oil and the Provence herbs and pour it over the salad. Gently mix.

    Instead of plain olive oil  I use the olive oil in which sun-dried tomatoes are marinated. It already contains herbs.
